About the Producer
Jaime Sanchez, an agricultural engineer, and his father, Fernando, grow coffee on their family farm, Finca Los Flores. They are members of Café Colis Resistencia, a collective of Indigenous Xinka producers working to improve livelihoods through quality-focused, self-managed coffee production. Since 2017, they’ve implemented sustainable farming methods and begun processing their own lots—culminating in this beautifully clean, honey-processed coffee. This is their first export to North America.

About Café Colis Resistencia
Café Colis Resistencia was founded to help Xinka farmers in southeastern Guatemala reclaim control of their coffee and their future. Named after the local nickname for their town, “Colis,” the group is building an international market for traceable, high-quality coffee grown with care. It’s also a broader movement for Indigenous rights, economic fairness, and land sovereignty.

Process Details
This lot was processed using the honey method, where ripe cherries are depulped but some sticky mucilage is left on the beans during drying. Unlike the washed process—where mucilage is broken down through fermentation and then washed off—or the natural process, where beans dry inside the whole cherry, honey-processed coffees are dried with mucilage intact on raised beds over 18–20 days. The result often sits between the two: a cup with the clarity of a washed coffee and the sweetness and body of a natural.
