About This Coffee
This lot comes from women producers within the CESMACH Cooperative, located in the buffer zone of the El Triunfo Biosphere Reserve in the highlands of Chiapas — one of the most biodiverse cloud forests in the Americas. The farms sit between 1,000 and 1,800 masl, all shade-grown, and carry Fair Trade & Organic certification at origin. Organic practices here aren't a recent adoption — they're rooted in generations of indigenous farming traditions that predate the certification itself.
The Women Producers program within CESMACH was built to recognize and support the women who actively manage and work these farms, by keeping their coffees separate and directing a price premium straight to them. Over the years that premium has funded vegetable gardens, women's health programs, and increased representation within the cooperative — including a seat on its board of directors.
Processed as a classic washed coffee and roasted to a medium-dark profile, this coffee offers comforting chocolate sweetness, soft red-berry notes, and a smooth, balanced structure. It works beautifully with milk, while remaining satisfying as an Americano or filter brew.
