Details About Coffee

Roast level: Medium
Origin: Various
Process: Washed

Our Morning Blend is built for depth: a rich, wine-toned cup layered with dark chocolate, clove, and orange oil. Blending lots from Guatemala's Café Colis Resistencia group with Leodan Bautista Vásquez's washed Bourbon from Honduras, it's a complex, fully developed cup with a long, textured finish — cabernet and mulled wine up front, dark chocolate and black forest cake through the body, cola on the way out

About Café Colis Resistencia

Café Colis Resistencia was founded to help Xinka farmers in southeastern Guatemala reclaim control of their coffee and their future. Named after the local nickname for their town, Colis, the group is building an international market for traceable, high-quality coffee grown with care. Beyond coffee, Café Colis Resistencia represents a broader movement for Indigenous rights, economic fairness, and land sovereignty.

About Semilla & Montecillos

Semilla's work in Honduras centers on smallholder growers around the Montecillos mountain range, where coffee has traditionally been sold as cherry to local buyers rather than processed by the farmers themselves. Named for the mountain range along the La Paz–Comayagua border, the project traces back to Antonio Ramirez, one of the first in the region to grow coffee commercially. Beyond the cup, Montecillos represents a broader effort toward smallholder independence — helping generational farmers build direct, traceable routes to market on their own terms.

These two summaries are based on information provided by our partner and green bean supplier, Semilla.
